Brown Butter Banana Fudge Cake

Brown Butter anything to me SCREAMS fall, and with the inclusion of banana and fudge really brings it over the edge! It's moist, delicious, fudgey, and warming. Of course the fudge is homemade(cause you know how I do!) and then there is also a toasted peanuts garnished on the top of the cake! Without further adieu I present to you my Brown Butter Banana Fudge Cake (click here to watch the video)!




Ingredients

Bundt Cake

2 sticks of butter, browned

2 eggs

2 1/2 teaspoons of vanilla extract

1/4 cup of vegetable oil

1 1/4 cups of whole milk

pinch of salt

pinch of ground cinnamon

1 1/2 cups of granulate sugar

1/2 cup of brown sugar

2 3/4 cups of all purpose flour

3 teaspoons of baking powder

1 1/4 teaspoons of baking soda

2 bananas, smashed + 2 teaspoons of high quality maple syrup


  1. Preheat your oven to 350 *F, spray a bundt pan liberally with non-stick spray( or butter and flour your pan). Brown the butter on medium heat until golden brown. Once its brown,(in a large mixing bowl)mix in both sugars, oil, eggs, and vanilla extract.

  2. Sift your dry ingredients into a separate bowl this includes: flour, salt, cinnamon, baking powder and soda. Whisk the dry ingredients together.

  3. Alternate the dry ingredients and whole milk starting and ending with the dry ingredients.

  4. Lastly, pour in your smashed bananas and gently fold. Bake for


For the topping

2/3 cup of lightly salted peanuts, chopped and toasted

1/2 bar of Ghiradelli Chocolate( your choice of dark, milk, or semi-sweet chocolate)


Fudge Frosting

1 stick of butter

1 1/4 cup of an array of chocolate( I used semi-sweet and dark)

2/3 cups of cocao powder

pinch of salt

1 cup of powdered sugar

a couple dashes of cinnamon


  1. Place all of your ingredients into a microwave safe bowl and heat for two to three 30 second increments until everything is melted(make sure to stir between each increment). Also, when you mix it it becomes a homogeneous mixture. Set aside to cool and thicken, this will thicken quite a bit as it cools if you choose to pipe it like I did heat up accordingly. If you would like to pour it over let it cool slightly before pouring onto your cake.

  2. Top with toasted peanuts and chopped chocolate.

  3. Serve and enjoy!
