As a kid, I've always love the Little Debbie Cosmic Brownies! I've created something even better and more decadent! I used my Chocolate Cake Mix to recreate this childhood favorite. I made these at a Bake Sale and they sold out!! Everyone loved them so I knew then that this recipe would be worth sharing!! :D I present to you my Cake Mix Cosmic Brownies!

As I stated before, these are a hit with my family and my neighbors these are sure to hit are your next gathering heading towards the holidays!
BROWNIE LAYER
1 cup Miguel's Chocolate Cake Mix
½ stick of butter
2 extra large eggs
2 teaspoons of vanilla
1/2 cup of brown sugar
1 teaspoon of coconut extract
1 cup of chocolate chips, melted
¼-⅓ cup of water
Pinch of salt
Confetti Birthday Cake Sprinkles
1.Preheat your oven 350*F. Butter and put place parchment paper in a 8x8 baking pan.
2. Start by melting your chocolate chips and butter together over a double boiler or in your microwave until fully melted( for the microwave option heat the butter and chocolate in 15-20 second increments. Stir to incorporate after each increment! Next, pour in your brown sugar in that same, this will cool down your mixture.
3. Pour in one egg at a time making sure that each egg is completely incorporated. Pour in the vanilla extract, salt, and then start pouring in the cake mix little by little until fully incorporated,and if needed depending humidity add in about 1/4 cup of water to thin out the brownie batter.
4. Bake at 350 for 30-31 minutes. Once baked all the way through, set aside to cool in the pan.
FUDGE SAUCE
3/4 Cocoa Powder (Unsweetened)
1 3/4 granulated sugar
8 teaspoons corn starch
1/4 teaspoon salt
1/4 cup semi-sweet chocolate chips
1/2 cup hot water
1/4 cup corn syrup
1 teaspoon Mexican Vanilla or Regular Vanilla Extract
2 tablespoons of butter
1. In a mixing bowl pour in the dry ingredients: cocoa powder, granulated sugar, corn starch, salt. Stir it until everything is evenly incorporated. Then add in the water, corn syrup and vanilla extract stir the mixture together until well combined.
2. Pour into a medium sauce pot and turn the heat to medium heat and cook for 20-25 minutes until it has thickened beautifully and coats the back of a spoon and when you run your finger through it it stays separated! Towards the end while the mixture is still hot you can add the chocolate chips. This may seem like a long time, but if you have it too high it could possibly burn so trust me temperature is perfect!
3. Once, the mixture has thickened let it sit a room temperature to cool before pouring on top of the brownies(so it wont melted the sprinkles).
4. Smear some of the fudge sauce on top of your cooled brownies, then sprinkle the confetti sprinkles all over. After that, allow the brownies to sit in the fridge this helps them to be really nice and fudgey!
