Homemade Baguettes (My Standard Bread Dough Recipe)

Makes 6 good sized Baguettes


3 cups of Bread Flour

1 1/2 cups of All Purpose Flour

1/2 teaspoon of salt

1/2 cup + 2 teaspoons of granulated sugar

1 package of (fast) active dry yeast

1 1/2 cups of warm water

1/4 cup of vegetable oil

extra all purpose flour to roll out dough

extra vegetable oil


1. Preheat your oven to 450 degrees Fahrenheit, place a cast iron skillet at the bottom on your oven and allow it to come up to temperature with the oven.(You want this to be screaming hot!) Then take your baking pan line it with parchment paper. Start by adding your yeast and two teaspoons of sugar to your warm water stir quickly then set aside to rise for 5 minutes. Meanwhile, stir together your dry ingredients: sugar, both flours, salt, and pour into the bowl of your stand mixer.

2. After your yeast mixture has proofed (should be able to smell it) pour that mixer into your stand mixer along with the vegetable oil. Then turn your mixer on low until it starts to come together then turn to a medium speed and allow it to knead it for 3-5 minutes allowing that glutton to form until its a nice smooth ball.

3. Remove dough from bowl getting every bit of dough (there shouldn't be any left after you've mixed it properly) and roll out quickly on a very lightly floured surface just to bring everything together. In that same bowl put in a couple tablespoons of vegetable oil then place the dough in their making sure that the dough is covered with it then place some plastic wrap over the top and let it rest for an hour or until it has double in size.

4. Once your dough has doubled in size roll out your dough, punch your dough down knocking the air out of it and roll it on a lightly floured surface. Then, cut your dough into 6 equal portions. Lightly roll your dough into a loose 8 to 9 inch log not doing too much to it then place it onto your baking sheet and cover it with plastic wrap and let it rise for another 30 minutes to an hour.

5. Once you've done cut three small slits gently using your small knife. Then sprinkle a light dusting of flour, next take that one cup of cold water and pour it into your hot cast iron skillet then quickly place your baguettes into the oven and shut it. Bake your baguettes at 450 degrees Fahrenheit for 30 minutes (baking two to three at a time depending on the size of your baking sheet) until a nice golden brown, or if you are wanting to bake them quickly bake them at 475 degrees for 10-12 minutes will be a beautiful golden brown!
