Knowing that I have my own cake mixes after these past few years still brings me joy! Growing up I always wanted to have my own, so that I could know the ingredients that went into my mixes. Here is my lovely DIY: Lemon Cake Mix..
Lemon Cake Mix: Makes 5 1/2 cups of Mix
3 cups of All Purpose Flour
2 1/4 cups of granulated sugar
1 teaspoon of salt
6 teaspoons baking powder
1 (3.4 oz) package of lemon pudding(for color and flavor)
1. Sift ingredients, then pour into a wide mouth mason jar(mine equals about 4 cups up to the brim, I usually have to use two jars, but you can always get bigger jars, I just use what I have! :D.) or an airtight container that is sure to keep the moisture out. Label, then set in your pantry(or a cool and dry place, your counter top is fine until ready to use!).
To make 12 cupcakes:
2 cups of Lemon Cake Mix
1 egg
1/2 cup of oil or butter
2/3 cups + 2 teaspoons of whole milk
2 teaspoons of vanilla extract
(you can lemon extract or fresh lemon juice; for the extract start off with about 1/2 teaspoon or to taste, lemon juice will be taste as well. Note: the consistency of the batter will change due to how much lemon juice you add. But you can just exchange some of the lemon juice for the milk)
1. Pour cake mix into a mixing bowl, add in egg, oil, and whole milk stir until it is a nice and smooth batter. Scoop the batter into your cupcake liners about halfway then bake in a 350 degree Fahrenheit oven for 15 minutes.
2. For extra lemon flavor you could make a lemon simple syrup(which is equal parts water and sugar plus however much lemon juice prefer boiled then cooled) then brush it over cupcakes and let it seep into the cupcakes before icing.
