Homemade Sourdough Bread

3 cups of Bread Flour

1 1/2 cups of All Purpose Flour

1/2 teaspoon of salt

1/2 cup + 2 teaspoons of granulated sugar

1 package of (fast) active dry yeast

1 1/2 cups of warm water

1/4 cup of vegetable oil

extra all purpose flour to roll out dough

extra vegetable oil

a sprinkle of cornmeal or flour


1. Preheat your oven to 400 degrees Fahrenheit. Then take your cast iron skillet line it with parchment paper. Start by adding your yeast and two teaspoons of sugar to your warm water stir quickly then set aside to rise for 5 minutes. Meanwhile, stir together your dry ingredients: sugar, both flours, salt, and pour into the bowl of your stand mixer.

2. After your yeast mixture has proofed (should be able to smell it) pour that mixer into your stand mixer along with the vegetable oil. Then turn your mixer on low until it starts to come together then turn to a medium speed and allow it to knead it for 3-5 minutes allowing that glutton to form until its a nice smooth ball.

3. Remove dough from bowl getting every bit of dough (there shouldn't be any left after you've mixed it properly) and roll out quickly on a very lightly floured surface just to bring everything together. In that same bowl put in a couple tablespoons of vegetable oil then place the dough in their making sure that the dough is covered with it then place some plastic wrap over the top and let it rest for an hour or until it has double in size.

4. Next, punch down your dough, roll out your dough then cut four to six equal portions,(depending on size your want it) sprinkle a little cornmeal or flour on the bottom of your cast iron place one of the fourths into the cast iron skillet cover with plastic wrap and let your dough proof and rest for 18-24 hours. At this time it should be more than doubled in size and you should really be able to smell the dough at this point. TIP: The longer you let it proof the better the flavor, but I wouldn't go more than two days, but this is my preference you can go further :).| I like the flavor that this amount of time gives me.

5. After you have allowed your dough to rest take off the plastic wrap, sprinkle some flour over the top and bake for 40-45 minutes depending on your oven and size of your loaf. It should be a lovely golden brown and soft in the middle.
