Last year I made these awesome rolls, but I thought I'd remake them for a blog post plus my viewers on Instagram voted for these. So, I immediately went into the kitchen to really make sure that I had all the measurements accurate for guys so when you make them they will too turn out awesomely for you and your family/friends! I present to you the Apple Pie Cinnamon Rolls!
I used my Standard Bread Dough, of course, but with a few tweaks. For my Bread Dough works amazing every single time so why change it? I am pretty sure that when you start making this dough you will too go this dough again and again for: rolls, pizza, cinnamon rolls, artisan breads, because it works EVERY TIME! :D
The first thing we will do is prepare the dough, then as it rises we will then prepare the apples.
INGREDIENTS: Makes 12-13 Rolls
3 cups of bread flour
1 1/2 cups of all purpose flour
1 1/2 cups of warm water + 1 packet of fast acting active dry yeast with 3 teaspoons of granulated sugar
2 eggs
1/2 cup of granulated sugar
1/4 cup vegetable oil
extra flour to roll out dough and for your hands
1. Preheat your oven to 350 degrees Fahrenheit. Next, prepare two 11 x 9 inch square baking pans by putting a piece of parchment paper then set aside until further use.
2. Then start by pouring the yeast/water mixture, oil, eggs, and then whisk together. Stir the both flours together and granulated sugar together in a separate bowl. Add in half the flour, then fold it in using a rubber spatula. After that, pour in the rest of the flour mixture then mix until it's a shaggy mass. Dump out onto your work surface, and knead for 10 minutes, as you need flour add it to the dough(not too much so that it wont become hard or dry, as you knead the dough it will get stronger and become smooth! Don't worry!). If you don't want to do this you can knead your dough in your Kitchen-Aid Stand Mixer for 7-8 minutes until smooth and elastic.
3. After you've kneaded the dough for 10 minutes, let rise for 1 hour.
PREPARING THE APPLE PIE FILLING
3/4 cups of brown sugar
2 tablespoons of all-purpose
2 teaspoons of ground cinnamon
(prepare this in a separate bowl from the apples)
1 Granny Smith apple peeled, sliced, then cut in half
1 Honey Crisp apple peeled, sliced, then cut in half
3 tablespoons of all-purpose flour
1/3 cup of granulated sugar
3 teaspoons of ground cinnamon
1 stick of butter(keep separate in a measuring cup or bowl from everything else)
pinch of salt
1. Mix the brown sugar, flour, and ground cinnamon into a separate bowl then set aside. After you have peeled, and sliced your apple cut them in half just like so..
2. After you have cut the apples place them into a bowl along with the granulated sugar, ground cinnamon, flour, and salt. Give it a nice stir to ensure that everything is incorporated evenly, then set aside to sit until the apple have softened( the sugar and salt with help draw out moisture from the apples, and with the flour it beautifully thickens the juices. Keep the melted butter set aside.
BACK TO THE DOUGH
3. Dump your dough onto a floured surface, degas, and roll out into a large square.
4. Pour most of the melted butter over the dough, and spread it all over the dough leaving an inch uncovered. Then, sprinkle all of the brown sugar mixture on top of the butter making sure that it evenly dispersed. Next, take the macerated apples and place then all over the dough, except for the inch around the border of the dough.
5. Starting from the opposite end from you, roll up the dough tightly until it reaches you then pinch the log to border. First, cut off the edges(because there will barely anything in them, but DO NOT, however, throw them away! You regather and make something else with it. :D) Then starting from the middle out began to start cutting your rolls to your desired size. I just keep cutting each cut in half, so they will be about an inch in width, but it's not rocket science just cut it how you like it.
6. Then in your prepared baking pans, place each roll cut side down, but if you forget no biggie just place them in the pan, cover them with cling film then set in a warm place for 30 minutes to an 1 hour or until doubled in size.
7. After they have risen and doubled in size bake in your preheated oven for 36-37 minutes, or until golden brown. Make sure to brush them with butter before they bake and if needed even as they bake! It gives it that soft top, and also start your rolls on the bottom of the oven because as I said before your baked good start from the bottom up, so make your way to the top as you bake them.
THE ICING
1 1/2 sticks of melted butter
4 cups of powdered sugar
2 teaspoons of vanilla extract
pinch of salt
dash of water, if needed
1. In a mixing bowl, pour in your powdered sugar, melted butter, vanilla, and salt. Sit together until smooth, and if the frosting is too thick add a dash of water. Then when the rolls come out let then sit for a couple of minutes before frosting them with the icing.
