(NO MACHINE) Roasted Garlic Loaf



This recipe was most definitely a hit with my family! It slightly crispy on the outside, yet soft and tender on the inside! I know that you will love this recipe and will want to make all the time like I do! :D Lol! And of course I used my Standard Bread Dough with a few additives, but in the long run its the same dough just a without the stand mixer. Don't be intimidate by ANY means, just take your time and follow the recipe! When you take your time, the more effort that is put into what you are making the better the product. Have fun, and enjoy!




DOUGH


3 cups of bread flour

11/2 cups of all purpose flour

1 1/2 cups of warm water + 1 packet of fast acting active dry yeast with 3 teaspoons of granulated sugar

1 egg

1 egg yolk

1/2 cup of granulated sugar

1/4 cup vegetable oil

extra flour to roll out dough and for your hands

cornmeal


1. Preheat your oven to 375 degrees Fahrenheit. Start by pouring the yeast/water mixture, oil, egg, and egg yolk, then whisk together. Stir the both flours together and granulated sugar together in a separate bowl. Add in half the flour, then fold it in using a rubber spatula. After that, pour in the rest of the flour mixture then mix until it's a shaggy mass. Dump out onto your work surface, and knead for 10 minutes, as you need flour add it to the dough(not too much so that it wont become hard or dry, as you knead the dough it will get stronger and become smooth! Don't worry!).

2. After you've kneaded the dough for 10 minutes, let rise for 1 hour.



SAUTEED GARLIC CLOVES IN OLIVE OIL/ADDING IT TO THE DOUGH


4 cloves of garlic, smashed(with knife) and chopped

Extra virgin olive oil

garlic powder to taste

garlic salt to taste


1. Add the fresh garlic to a small sauce pot. Then pour in the olive oil, just enough to cover the garlic cloves. Cook on medium heat until lightly golden brown and slightly crispy.

2. Remove the garlic oil from the burner, then drain the oil into a separate bowl. Lastly, add in your garlic powder and salt!

3. After the dough has risen for 1 hour punch it down knocking out the air bubbles, remove the dough from you bowl and press down again to make sure that the dough it completely degassed. Give it a quick knead, then cut it in half then set one half aside. Roll one half into a square then take half of the garlic and sprinkle it across the dough then fold all the corners into the middle and bring the dough together. Then cut that piece of dough in half then bring it back together again. If the garlic is on the outside of the dough, meaning that it is showing that's fine! You want it to look nice and rustic! Do the same thing for the other half.

4. Sprinkle a little cornmeal onto your baking pan then place the dough on your baking pan, cover with cling film then let the dough rest for another 30 minutes so that it can double in size.

5. Once the dough has rested take remove the cling film brush the dough with the garlic oil(be careful not to press down to hard when your brush the dough so that it wont deflate your beautifully risen dough!) then bake your loaves at 375 degrees Fahrenheit for 30-32 minutes and it is beautifully golden and brown. As you bake your loaves make sure to rotate and brush with the garlic oil. I love to start my loaves baking on the bottom on my oven then work my way up because your loaves bake from the bottom up. That a way your get nice color and neither the bottom or the top are overcooked!
