Pancake & Egg Breakfast Squares



The YouTube Channel, "Tasty", had something very similar to this, and I've always wanted to recreate my own! I make my own Waffle/Pancake Mix so I decided to give it a dry so I did! And it came out wonderfully! It has a layer of grape jelly, egg, and cheese sandwiched by two large pancakes baked in 11x9 baking pans! And best thing is that they are freezer friendly. I am trying to get more protein in my system before I go to work to last me all morning, and these will surely help me to do so.




PANCAKE RECIPE USING THE MIX


A whole recipe of my Pancake Mix(yes, all of it :D this makes two pans of pancakes)

2 1/2 cups of whole milk

6 egg yolks

6 egg whites whipped with 1/2 teaspoon of cream of tartar

1 1/2 teaspoons of vanilla extract

3 tablespoons of vegetable oil


1. Preheat your oven to 350 degrees Fahrenheit. Then butter two 11x9 square pans then set aside

2.Pour the pancake mix into your mixing bowl. In a separate bowl whisk the whole milk, eggs, oil and the vanilla extract together, then slowly start incorporating the milk mixture into the pancake mix. It might be a little clumpy but that is why we are adding in the whipped egg whites. Make sure that you scrape the bowl off from the bottom and the sides before adding in the egg whites.

3. First, add a quarter of the whites, you don't have to worry about being gentle

you can vigorously mix the quarter of it in. After you've done that, GENTLY fold in the rest of the egg whites in slowly until their fully incorporated. Next, evenly divide your pancake batter into your prepared pans. Bake them in the oven at 350 for 20-21 minutes for until fully cooked until slightly golden brown.

4. A couple minutes after they have cooled slightly, rub some butter on the pancakes. Set them aside to cool completely.


EGG LAYER


12 large eggs

salt according to taste

pepper according to your taste

small dash of cumin

1/2 cup of whole milk


1. Whisk all the ingredients together, then pour into a 11x9 pan, buttered, then bake at 350 for 15-17 minutes, or until completely cooked all the way through. (Start cooking the egg layer on the bottom shelf of the oven, then halfway in between the cooking time move it to the top to finish cooking.)

2. Once the egg layer is done cooking in the oven, remove from pan gently, then sprinkle over your favorite cheese. Let the cheese melt.


ASSEMBLING THE SQUARES


Take one of the pancake layers and flip it upside down, slather heaping spoons of jam, according to taste. Then, the layer of the egg, and lastly the other pancake right side up. Press down slightly, then using a serrated knife cut off the edges of the pancake. Then, cut the slab into 12 squares. Enjoy! Or double wrap them in cling film place them in an airtight container and freeze them. When you are ready reheat them in your

microwave, and eat with a little bit of syrup.








 


FREEZER PREP/MICROWAVE PREP(OPTIONAL)




1. Double wrap the pancake squares in cling film and let it harden overnight.

2. When ready to eat take two damp paper towels, cover the pancake square and press down slightly. Place on a plate and put in it the microwave for two and half minutes, or you can put it on your frozen dinner setting, just make sure to watch that it doesn't overheat.

3. Let cool slight then enjoy with maple syrup!
