Easy Valentine's Day Peanut Butter Cups


Valentine's Day is this Sunday, heading up to the special day I want to give you easy recipes that you and the special someone will love! They will feel the love without you having to be in the kitchen forever! So without further adieu I present to you my Easy Valentine's Day Peanut Butter Cups!





Tools: Measuring Cups, Mixing Bowl, Piping Bag, Knife, Spoon, Mini Cupcake Liners


Prep Time: 15-20 minutes


Serving: Makes 16 Mini Peanut Butter Cups


Tip: Line your mini cupcake pan with the mini cupcake liners.




 


INGREDIENTS




Chocolate Coating

1/2 cup of semi-sweet chocolate

1/2 tablespoon of coconut oil


White Chocolate Coating

1/2 cup of white chocolate chips

1/2 tablespoon of coconut oil


(Optional) Pink Chocolate Coating

1/2 cup of white chocolate

1/2 tablespoon of coconut oil

a few drops of pink gel food coloring


Peanut Butter Filling

1/2 cup of cream peanut butter

3/4 cup of powdered sugar

1-2 teaspoons of water, or milk(if needed)


  1. For the chocolates melt them in your microwave, one at a time doing 10-15 second intervals until melted. After each interval make sure to stir so that the chocolate doesn't burn. You can do the pink chocolate coating at the end once your candies are set.

  2. Next, for the peanut butter filling mix the peanut butter and powdered sugar together until its homogeneous. You might need a few dashes of water or milk to make it more pliable. Because it might be dry while your mixing. Pour the mixture into a piping bag, then squeeze a small bit into each mini cupcake liner.

  3. Then, pour the white chocolate and semi-sweet chocolate over each of the peanut butter fillings. You can mix then together or you can keep it simple and pour just one kind into each mini cupcake liner. Place them into the fridge for 10-15 or until they are set.

  4. You can do I did and remove them from the liners and drizzle the pink chocolate over, or leave them in the liner until you are ready to serve. And then you can drizzle the pink chocolate then.
