Spicy Super Bowl Buffalo Wings with a Ranch Dipping Sauce




Tools: Sauce Pot, Tongs, 2 Large Rectangle Pans, Wooden Spoons, Gloves(optional), Mixing Bowls, Measuring Cups, Wire Rack, Sheet Pan, Paper Towels for catching the excess oil off your chicken.


Prep Time: 20 minutes


Cook Time: 28-30 minutes


Serving: about 3-4 people, double the recipe if needed


Tip: Have all your ingredients measured out already. Also, have your chicken patted down as well so that they are dry! Make sure to a have bowl with paper towels inside to catch the oil.





 



INGREDIENTS


2 pounds of chicken wings

Seasoning for chicken

1 teaspoon of garlic powder

1 teaspoon of seasoned salt

2 teaspoons of kosher sea salt

A few cracks of fresh black pepper, or to taste

1 teaspoon of garlic salt

1/2 teaspoon of chili powder

A light shake of cayenne pepper powder

1 tsp of parsley flakes

1/4 teaspoon of poultry seasoning

1/2 teaspoon of paprika

+extra kosher sea salt to sprinkle over chicken wings as they come out the oil


Dredging Station Ingredients


Flour Mixture

2 1/2 heaping cup of flour

2 teaspoons of kosher sea salt

a few dashes of ground black pepper


Egg/Milk Mixture

4 eggs

1/2 cup of whole milk

2 teaspoons of kosher sea salt

a few dashes of ground black pepper

+vegetable oil for frying


  1. Pour your vegetable oil a little less than half into a large sauce pot. Then, take a few pinches of the chicken seasoning and put into both the flour and the egg/milk mixture. Pour the rest of the seasoning over the chicken, and massage in and all over the chicken.

  2. Turn heat to medium for your oil and let it began to heat up as you do this process. Take your wings and dip them into the egg dredge first(let the excess egg drip off the chicken), then into the flour(make sure to get that excess flour off just by patting it lightly), then repeat one more time.

  3. Once you are finished dredging, check to see if your oil it hot enough. If you sprinkle a tiny bit clean flour into the oil and it sizzles its ready! Place about 3-4 wings into the oil, then turn the heat slightly past medium heat so about a 6 or so, and let them cook for 7-8 minutes, so about 3-4 minutes on either depending on how big your wings are!

  4. Make sure to have a bowl line with paper towels to catch the oil, and as soon as the wings come out sprinkle lightly with more kosher sea salt! If you are not ready to eat these right away place them into a 300*F oven on a wire rack with a sheet pan underneath to keep the wings warm and crispy!

Buffalo Sauce

1 cup of Frank's Red Hot Buffalo Sauce

1 stick of butter or 1/2 cup

1 teaspoon of kosher sea salt

1/2 teaspoon of ground black pepper

One teaspoon of gold powder

2 teaspoons of sugar

1/2 teaspoon of parsley flakes


  1. Melt your butter in the microwave for about 45 seconds. Then pour in your choice of buffalo sauce, and the of the seasonings. Before you are ready to pour over the wings make sure to heat this up until its piping hot! You want to equate the heat of the wings, you don't want this to cool it down in any away!


Ranch

1 cup of Miracle Whip(the flavour of the miracle whip is key, but use mayo if that's all you have!)

2 tablespoons of sour cream or non-fat Greek yougurt

1 teaspoon of parsley flakes

1 teaspoon of garlic salt

1 teaspoon of garlic powder

1/2 teaspoon of kosher sea salt

a small pinch of ground black pepper

14 tablespoons of whole milk (if you want it thicker add less milk, for it to be thinner add more I find that this amount if just thick enough and fluid enough!)


  1. In a mixing bowl or measuring cup place all of your ingredients except for the milk and stir. Begin with 3 tablespoons of milk, then proceed according to your preference if you want it thicker like a dip or thinner like a sauce.



PULLING IT TOGETHER


1. Pull your wings out of the oven and place them into a bowl. Pour over the desired amount of the buffalo sauce, toss with your wooden spoons, and place them on your serving place(make sure let it the sauce drip off so your presentation wont be messy), drizzle over the homemade ranch.
