Ever want a cheesecake, but don't feel like waking up super early just to have it for dinner? I have the perfect recipe that I know you will love! If you love tangy lemon curd, sweet blueberries, and creamy whipped cream this is the recipe for you! This recipe popped in my head, and it came out so much better than I could have ever imagined. It's like a citrus version of my Cake Trifles 2 Ways!, you should check out that recipe too. Without further adieu I present to you my No-Bake Lemon Blueberry Cheesecake Trifles!
Tools: Mixing Bowls, Rubber Spatula, Whisk, Sauce Pot, Hand Mixer, Piping Bags, Glass Cups, Wooden Spoon, Piping Tips(Optional)
Prep Time: about 40 minutes
Serving: Regular Recipe will make about 4-6 serving depends on how much you add into each cup. Double the recipe 8-10 servings.
Tip: Make your lemon curd, blueberry jam, graham cracker crust, and whipped cream cheese layer ahead of time. So everything can be cooled down by the time you're ready to put them together.
INGREDIENTS
LEMON CURD(you can double or even triple this recipe, just multiply everything by 2 or 3.)
3 egg yolks
1 whole eggs
1 cup of granulated sugar
1/2 cup of whole milk
1 teaspoon of vanilla
1/4 cup of cornstarch
2 lemons juiced ( both lemons zested, serve the zest of one for the blueberry jam)
1/4 teaspoon of salt
1. Start by heating the milk and vanilla on the stove at medium heat. Meanwhile, beat your eggs, sugar, salt, and cornstarch together for two minutes until its thickened slightly, yet still fluid, and pale in color. Next, pour in your lemon juice and stir together.
2. Carefully, pour the milk in the egg mixture while stirring vigorously.
3. Pour the mixture back into your sauce pot, making sure to get everything out. Cook on medium high heat for 5 minutes while stirring. Strain through a fine sieve.
4. Cover with plastic wrap(make sure the plastic wrap is touching the curd so it wont form a skin!). Then place it in the fridge until it completely cooled.
BLUEBERRY JAM(you can double or even triple this recipe, just multiply everything by 2 or 3.)
18oz package of blueberries(I used organic)
1 cup of granulated sugar
1 zest of a lemon
1/4 teaspoon of kosher salt
3 tablespoons of cornstarch
1 teaspoon of strawberry extract
Add everything to a sauce pot. Then, cook for 12-13 minutes on medium heat until nice and bubbly and thick! Once its finished cooking, place in a airtight container then into your fridge until it has cooled completely.
WHIPPED CHEESECAKE LAYER
Regular Recipe
2 cups of heavy whipping cream
4oz(or half a block) of cream cheese, softened
1/4 cup of granulated sugar
1 teaspoon of vanilla extract
1/4 teaspoon of salt
ex. Doubled
4 cups of heavy whipping cream
8oz(or one block) of cream cheese, softened
1/2 cup of granulated sugar
2 teaspoons of vanilla extract
1/2 teaspoon of salt
Whip your cream cheese, sugar, and vanilla extract in a mixing bowl using your hand mixer until nice and creamy. Then, little by little add in your heavy cream until you have used it all up. After each addition just whip the mixture until it has thickened. DO NOT over mix, you don't want this to become butter!
Give it one last good mix on medium high speed for 30 seconds to a minute until its really thick. Set aside in the fridge covered with plastic wrap(make sure its touching the surface of the cream) until ready to use.
Optional: add a few spoons of this mixture to the lemon curd after it has cooled. I do this to lighten the lemon curd because it is so tart.
GRAHAM CRACKER CRUST
Regular Recipe
1 package of graham crackers, crushed
1/2 stick or 4 tablespoons of butter, browned
ex. Tripled Recipe
3 packages of graham crackers, crushed
1 1/2 sticks of butter, browned
Place your butter in a small saucepot and turn your heat to medium. Let the butter cook slowly as it cooks it will began to foam, then it will begin to brown. At this point make sure to watch it closely DON'T WALK AWAY FROM IT. This process should take about 5 minutes.
Pour over your crushed graham crackers, then carefully mix it together with a spoon until it reaches a sand like texture. Set aside.
BUILDING THE TRIFLES
Start with the layer of graham crackers, then a layer of the whipped cheesecake layer, blueberry jam, another layer of the whipped cheesecake , lemon curd(you can stop here and garnish it with more of whipped cheesecake layer and leftover graham crackers or you can), and lastly add more of the blueberry jam then garnish it with the whipped cheesecake and leftover graham crackers.
Set in the fridge a few hours before serving(this yields the best results, because each of the layers have chance to sit, marry, and thicken), or you can enjoy right away.
