German Chocolate Brownies

I have always wanted to make these after seeing these online. The thought that I could have an handheld German Chocolate Cake flavored brownie on-the-go really make me excited to make it! With everything going on, I understand if you don't have some of these ingredients, just use what you have. Without further adieu I present to you my German Chocolate Brownies!




Here are the ingredients!


(Optional) For the German Chocolate Cake Topping

*You can use store-bought topping, but if you can find these ingredients I recommend making your own!*


3/4 cups of brown sugar

3/4 cups of granulated sugar

1 egg yolk

(12oz) can of evaporated milk

1 stick of butter, salted

2 1/4 teaspoons of vanilla extract

2 cups of Sweetened Shredded Coconut

1/2 cup of chopped pecans

1/4 cup of cornstarch

Pinch of salt


1. Place everything into a sauce pot except for the pecans and shredded coconut. Cook on medium low(which is about a 5 for me)until it becomes slightly thickened, or until you can run your finger on the back of a spoon and it remains separated.

2. Add in your shredded coconut and the pecans, pour into a bowl, cover it with plastic wrap and let it sit in the fridge until completely cooled. You want it to be set by the time the brownies are done cooling.




 

For the Brownie Layer:


1 stick of butter, melted with chocolate chips

1 cup of chocolate chips( In this particular recipe I used a 1/2 cup of semi-sweet chocolate and a 1/2 cup of bittersweet chocolate)

2 large eggs

3/4 cups + 1 tablespoon of flour(ALL dry ingredients are to be sifted excluding the sugars, this gives the brownies that extra lift)

1 teaspoon of baking powder

1/2 teaspoon of salt

2 teaspoons of vanilla extract

3/4 cups of granulated sugar

1/4 cup of brown sugar

1/4 cup + 1 tablespoon of 100 % cocao(yes cocao not cocoa) powder


1. Preheat oven to 350 degrees Fahrenheit, and butter an 8x8 square pan(I use a glass pan!). In a heatproof mixing bowl in about 30 second intervals(depends on the wattage of your microwave, mine is 1,000 watts) until the chocolate and butter are melted. If there a few small chunks of chocolate that is fine!

2. Next, add in both sugars to the chocolate mixture. Mix it together completely until combined, if it looks gritty its fine because add we add everything else it will liquefy!


3. Thirdly, in a separately bowl whisk your egg for 30 seconds to a minute, this is what gives your brownies that signature crackle top. :) Then, add that along with your vanilla into the chocolate/sugar mixture.


4. Mix both mixtures together in your mixing bowl with the chocolate until it is nice, smooth, and homogeneous. Next, sift your dry ingredients into another bowl. After that, add half of the dry mixture into the wet ingredients, and using a rubber spatula fold all the ingredients together.



5. Carefully, fold in the last half then pour batter into your buttered 8x8 baking pan. Sprinkle over about a 1/4 cup of chocolate chips before popping them into the oven. Then bake at 350 degrees Fahrenheit for 29-30 minutes, or until you put a fork in and it comes out clean!

6. Once the brownies are done, place then on a cool surface or wire rack until completely cooled!



7. Once the brownies are cooled, top the brownies with the cool German Chocolate Frosting. Then, put it in your fridge at least 4-6 hours or overnight. Once they are set, slice them in squares(their size is) according to your preference.




 




For the chocolate drizzle:


1/2 cup of chocolate chips

1/2 tablespoon of coconut oil


1. In a microwave safe bowl pour in your chocolate chips and coconut oil, heat in your microwave in 30 second intervals until completely melted. Drizzle over your brownies, let them sit in the fridge to let the coating set or enjoy right away!
